Looking for a reason to open a bottle of wine before dinner?
Trying some new wine and cheese pairings is the perfect excuse!
If you don’t know where to start, have a look at this tasting wheel and give it a try. Some basic rules that I have come across usually work out quite well:
1) Pair acidic wines with creamy cheeses (think Sauvignon Blanc with goat cheese). The acidity in the wine will cause your mouth to water and this helps to clear out the gooey cheese between bites.
2) Pair smoked and heavy wines with complementary cheese (smoked Gouda with Cabernet Sauvignon).
When in doubt, a simple mild or white cheddar, or even Brie/Camembert seem to go well with most wines.
